EASY CAULIBROC FRIED RICE

Lately, I’ve been making Clean Caulibroc Fried Rice at the beginning of the week and adding different protein to it during the week for my lunches. Honestly this is one of my favourite creations and to save time I use @SunRice perfectly portioned SuperGrains cups (all you do is microwave them for 40 seconds and you’ve got rice for the recipe!).

Glutenfree // RefinedSugarFree 

INGREDIENTS: 
  • SunRice SuperGrains SuperDuo Microwave cups (available at most supermarkets)
  • 1 whole cauliflower
  • 1 whole broccoli
  • Spinach
  • Nutritional Yeast 
  • Spices of your choice (Turmeric, Cayenne Pepper, Cumin & Dukkah)
  • 2 whisked eggs
  • Salt & Pepper 
METHOD:

Preheat oven to 180 degrees (fan forced).
Chop cauliflower and broccoli into small florets.
Line a tray with baking paper, put broccoli and cauliflower on tray and drizzle with olive oil.
Add spices & nutritional yeast and cook for 20 minutes or until crispy.
Heat oil in frying pan, add whisked eggs and allow to cook while omelette forms. Once omelette is cooked, chop into small pieces and set aside (leave frying pan for convenience as you will be using it again!).
Microwave one SunRice SuperGrain Cup.
Add rice to frying pan (with egg) plus cauliflower and broccoli.
Stir together and add extra salt/pepper/spices for flavour.
SERVE & ENJOY!
OPTION: Add extra protein (chicken, fish, tofu) for a substantial meal.
