Breastfeeding slice
This slice gives me life!! Whether you’re needing some energy in general or are looking for a breastfeeding or non-breastfeeding “mum snack”… this is my go-to! I always have this in the freezer! It's also great to give to new parents instead of a gift (home-cooked meals are always my go-to!)
Base
1 cup macadamias
1 cup almond meal
1/2 cup wholegrain oats (sub for almond meal if you’re coeliac/ #glutenfree)
9 dates
1/2 cup desiccated coconut
1/2 cup runny peanut butter
Middle layer
1/2 cup peanut butter
Top layer
5 tbsp cacao
6 tbsp honey
1/2 cup coconut oil
1.5 tbsp collagen
(Double this if you want an extra thick top choc layer)
Method
Blend macadamias, almond meal and oats until combined. Add in the rest of base ingredients until mixture can be pressed between your thumb and middle finger. If for some reason this doesn’t happen, add another date!
Freeze base layer for 2 hours.
Spread peanut butter over base and freeze until hard.
Make choc topping by melting coconut oil and honey over low heat. Remove from heat and whisk in cacao and collagen until completely combined. Quickly pour over slice and place back in the freezer. Remove after 2 hours and cut into small squares (I use a hot knife to slice through the slice).
Store in the freezer!
