EASY one-tray chicken, olive & date bake

This is that recipe you need when your kids are screaming at your feet but you've given them pasta 5 days in a row and want to mix it up and actually eat something semi-healthy but also enjoy your own dinner. Give your toddler the choice of what they have with it (e.g. something BEIGE aka pasta, rice, pearl couscous). My toddler surprisingly eats the olives, dates, potato and a couple of strands of chicken from the tray bake (he leaves the tomatoes and hates sweet potato). 

Ingredients

6 chicken thighs (I buy ones with the skin on!)
1/2 cauliflower chopped into florets
1 small onion roughly chopped into chunks
1 sweet potato (chopped into 5cm chunks)
4 medium potatoes quartered
5 dated (pitted) and halved
6-8 black olives (pitted)
6-8 cherry tomatoes
1 cup bone broth 
Seasoning of choice (I use Mingle Seasoning Garlic & Herb or Herbamere)

Serving options (makes the recipe more #beigetoddler approved):
rice, pasta or pearl couscous 

Method
Preheat oven to 180 degrees
Add all chopped vegetables to a baking tray. Sprinkle olives, tomatoes and dates over the top.
Lay chicken breast over the top of the vegetables. 
Pour bone broth over vegetables and chicken. Drizzle a generous serving of olive oil over tray. 
Season with dried herbs of choice & salt (I use Mingle Seasoning Garlic & Herb seasoning available at Coles)
Cook for 45 minutes to 1 hour or until potatoes are cooked and chicken is browned.
