Green Machine Pesto (add me to everything!)
This pesto has been my son's FAVOURITE addition to pasta, sausage rolls, pizza, omelettes... you name it! It's one of those recipes he's never grown out of and continually asks for...and i'm not complaining. It contains 2 whole heads of broccoli, cashews, garlic and healthy fats from olive oil. I make a big batch and freeze half but also keep some in a jar in the fridge for those days I haven't prepped dinner. It's no secret my son loves this recipe but if you have a beige eater who is currently "anti-green", try hiding it under pizza toppings or in sausage rolls for a green nutrient boost.
Broccoli pesto
Ingredients
3/4 cup fresh basil
3/4 cup fresh parmesan
3/4 cup olive oil (use garlic olive oil for extra flavour)
3 cloves garlic (I add to the steamer with broccoli)
1.5-2 heads of broccoli (steamed, with majority stalk removed)
1/2 cup roasted cashews (+ more for serving!)
Method
Steam broccoli & garlic until broccoli is VERY tender.
In a blender combine all pesto ingredients (basil, cashews, parmesan, olive oil, garlic, broccoli). You may need to add more oil depending on water retained in broccoli. Add accordingly.
Add to gnocchi, pasta or choice or as a side with meals!
