Passion Fudge

Did you know Passionfruit is available year round with two peaks per year (in Summer & Winter). Passionfruit is a good source of Vitamin C and is also DELISH in this recipe. If you follow me on instagram you would know I am obsessed with fudge recipes at the moment... add another one to the list. I know the ingredient combo sounds a bit weird but trust me on this one - if you like passionfruit, you will LOVE this. 


Pulp of 3 passionfruit 
3/4 cup Almond Butter
3 tbsp Rice Malt Syrup
3 tbsp Coconut oil 


Place almond butter, coconut oil and rice malt syrup in a heat proof dish over a saucepan of boiling water.

Combine until smooth and remove from heat.

Add passionfruit pulp from one passionfruit, combine and pour mixture into a small, lined rectangular tray (I use a tupperware container and it is perfect!)

Set in freezer for 2-3 hours

Chop into fudge sized squares and smother with passionfruit. 

Store in freezer and enjoy!!
