Toddler friendly Apple Pie Muffins

These muffins are amazingly MOIST (hate that word but had to use it). They are a whole-family favourite and I haven't met one person that doesn't like them. I am yet to try the recipe with different fruit but if you try using other seasonal fruits, let me know how it turns out. 

These muffins would be great for baby lead weaning from 7 months (once all allergens are introduced). You could replace the sweetener with a mashed ripe banana or additional coconut yoghurt (please note* babies can only consume honey after the age of 1)

Makes: 12

INGREDIENTS

1 3/4 cup cassava flour (you could also use regular flour or spelt flour)
1 tsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
Sprinkle salt
1 apple grated
1 apple diced
1/3 cup melted coconut oil
1/2 cup rice malt syrup or maple syrup (or honey if your baby is over 1!)
3 eggs
1/2 cup coconut yoghurt
1 tsp vanilla

Method

Preheat oven to 170 degrees.

Combine dry ingredients and set aside.

Combine wet ingredients (including grated/diced apple) and set aside.

Add wet ingredients to dry and place in lined muffin tin.

Bake for 25 mins or until knife/fork comes out clean.

Allow to cool before serving!
