Cheesy homemade crackers
Okay ... if you've walked down the cracker aisle at the supermarket and checked ingredients, you may have found everything from MSG, to seed oils, flavour enhancers and preservatives. We all want to give our children the best and although making crackers every week isn't exactly realistic; this recipe is worth the time spent. I also want to say that i'm not perfect, my children have definitely eaten the crackers with additives (they did 4 days ago)... I just try to avoid the boxes with many ingredients.
These crackers are worth the time if you have a toddler that only eats "beige" or "crispy" food. They are also great for dinner parties as a side with cheese and dip! I've added sweet potato for a healthy twist and all in all, they have minimal ingredients.
Ingredients:
1.5 medium sweet potatoes (steamed and mashed)
1 cup plain flour
1/2 cup tapioca flour
3/4 cup parmesan cheese (grated)
3 tbsp olive oil
Toppings (optional)
Nutritional yeast (this gives a "shape-like" flavour)
Paprika
You will also need a rolling pin
Method
Preheat oven to 180 degrees.
Steam 1.5 sweet potatoes in a saucepan (I steam mine in a steam basket to avoid excess moisture). Mash and set aside to cool (to speed up this process, you can pop the mash in the freezer while you prep other ingredients).
Once sweet potato has cooled, add cheese, flour (tapioca and plain) and olive oil. Combine until dough-like consistency forms. Knead for approx 2 mins then place in the freezer for 10 mins (or longer if you have time) to firm up.
Flour your bench top (and rolling pin) and roll the dough until they are approx 1.5/2cm thickness. The thinner you make the biscuits, the crispier they'll be...
Use a sharp knife or pizza cutter to cut dough into cracker rectangles (you could also use a cookie cutter if you want to be extra creative!). Pop onto a flat, lined baking tray. Spray with olive oil and sprinkle with desired toppings.
Bake the crackers for 20-30 minutes or until golden brown (ensure you're watching them as they can burn quickly once they're crispy).
Allow to cool completely! Serve to your toddler or dinner party guests. For adults, these would be great with spinach & cashew dip, hummus, pesto or your favourite cheese!
