Homemade Gnocchi with broccoli pesto

Another #toddlerfriendly recipe that was also a hit with my family! This one is EPIC. Let's be real, we don't all have time to make gnocchi so if this does not tickle your fancy, opt for any other pasta. That said, if you have some time and you find it therapeutic like me, TRY IT! This recipe was DELICIOUS! Enjoy xx 

Homemade Gnocchi

Ingredients

4 medium potatoes (or roughly 450g/500g of potatoes)
1.5-2 cups of flour (plus more for surfaces)
Pinch salt
1 medium egg (room temperature)

To cook: 
Butter 
Olive oil
Garlic

Method
1. In a large pot, bring water & salt to boiling point. Add potatoes to water and boil until tender. Remove from the pot, drain and allow to cool (to speed up this process, run them under cold water when draining).

2. Mash the potato until lump free. Make a well in the middle of the mashed potato and crack the egg in the centre. Mix it with a fork, then add 1/2 cup flour. Combine with a wooden spoon until mixture forms dough like texture. You may need to add more flour here.

3. Flour your bench top and hands and put dough on surface. Add flour until mixture doesn't stick to your hands (so you can knead it).  Cut the ball of dough into four even pieces. On a lightly floured surface, form each piece of dough into ropes and cut into ¾ inch (2 cm) pieces. Press a fork into each 2cm piece (but not too hard). Sprinkle with a little bit of flour and toss, so they don't stick together. Set aside then heat a frying pan.

4. Fry gnocchi in a hot pan with butter and garlic/olive oil

5. Add to desired sauce! I love this recipe with vegetable passata, bolognese or broccoli pesto (broccoli pesto recipe below)! 

Broccoli pesto 

Ingredients

3/4 cup fresh basil 
3/4 cup fresh parmesan
3/4 cup olive oil (use garlic olive oil for extra flavour)
3 cloves garlic (I add to the steamer with broccoli)
1.5 head of broccoli (steamed, with majority stalk removed)
1/2 cup roasted cashews (+ more for serving!)

Method

Steam broccoli & garlic until broccoli is VERY tender.

In a blender combine all pesto ingredients (basil, cashews, parmesan, olive oil, garlic, broccoli). You may need to add more oil depending on water retained in broccoli. Add accordingly.

Add to gnocchi, pasta or choice or as a side with meals!
