Family Favourite Buttery Prawn Pasta
Ok this recipe is on repeat in our household, particularly on the days I need dinner in under 30 minutes (queue screaming toddler at feet). Note - both my children do not like prawns but they will eat them in this dish if I chop them finely.
I use fresh gluten free pasta - loving the Pasta bah gluten-free pasta at the moment!
Note* this recipe was adapted from the SmartHQ app which comes with my new Haier Induction Cooktop. If you are in the market for a new cooktop, I HIGHLY recommend Haier. I currently have the 60cm 600 Series Induction Cooktop. My fav features are listed below:

Ingredients
500g green prawns (peeled, deveined and finely chopped)
3 tbsp olive oil
Generous knob of butter
4 cloves garlic, crushed
Parsley (finely chopped)
100g fresh parmesan, grated
Lemon juice (to serve)
Pasta or Spaghetti of choice
Method
Cook pasta in salted water. Remove 1/2 cup of pasta water from the saucepan before draining. Set aside while cooking prawns.
In a large pan, heat the olive oil and butter over medium heat.
Add the finely chopped prawns and cook until they are pink and cooked through, about 3 minutes per side.
Add the garlic and cook for 2-3 minutes.
Add pasta to your frying pan and 1/2 cup of pasta water as well as lemon juice. Stir through for 30-60 seconds.
Top with parmesan and finely chopped parsley and serve immediately!
