One Bowl Almond & Herb Drumsticks with Crispy Potato & Cauliflower Bake

This is my toddler recipe of the month! If you have a child who doesn’t like the taste or texture of chicken, try offering crunchy drumsticks instead! Both my boys have never loved the texture of chicken so I thought i'd mix up how I serve it, and I was pleasantly surprised. 

This recipe was devoured by both my four year old and two year old on multiple occasions, it wasn’t a one hit wonder and it is so easy to prepare and cook because you crumb the drumsticks in ONE BOWL (that’s right, minimal washing up).

You can bake this all in one-tray but we recently had a kitchen renovation and have been loving our new oven from Haier Australia. We installed the 60cm 600 series built-in oven and haven't looked back. It has:

Ingredients

For the drumsticks:

1 cup Almond Flour or Meal
1/2 cup flour of choice (I used a GF alternative)
Herbs & Salt of choice (I used Mingle Seasoning Garlic & Herb Seasoning. You could use oregano, paprika or cumin with salt)
2 eggs
7/8 Chicken Drumsticks

For the potato cauliflower bake:

1/2 head cauliflower (roughly chopped)
6 small potatoes (skin on) cut into quarters
3/4 cup cheddar or mozzarella 

Salad (optional)
Pre-made coleslaw
1 apple (cut into thin strips or grated)
handful sultanas 
2 tbsp olive oil 
2 tbsp mayonnaise 
1 tsp apple cider vinegar

Method 

1. Preheat oven to 180 degrees
2. Boil a saucepan of water and add chopped potatoes. Boil until very tender. Once boiled, place in a baking tray with cauliflower, drizzle with olive oil and top with cheese. Bake in the oven for 1 hour or until golden & crispy on the outside.
3. Place drumsticks in a bowl OR place in a large zip lock back or tupperware container (this is even better than a bowl for coating). Add flour and shake or use tongs to cover drumsticks. Add egg mixture and repeat until drumsticks are fully wet. Coat with remaining almond meal & mixed herbs. 
4. Place on a baking tray or if you have an air-fryer function in your oven, on the air-fryer tray. Spray or drizzle with olive oil and sprinkle with extra salt (optional).
5. Place in the oven for 45 minutes or until golden and crunchy on the outside.
6. Combine coleslaw, sultanas and apple. Add olive oil, mayonnaise and apple cider vinegar and toss until the salad is well-coated.
7. Serve! Add sauce to sweeten the deal for toddlers (we love Mingle Seasoning Tomato and BBQ sauce or whole egg mayonnaise).
