Green Machine Quiches
My current go-to park dinner! If you haven't tried taking dinner to the park, this is your sign. Make sure you reduce or remove snacks in the afternoon so they are hungry when they're at the park. I like to make it a "special occasion" and hype up having a park dinner. We often bring a picnic mat, cups and paper plates to minimise washing up!
Ingredients
2-3 Pastry sheets (I use this one)
1/2 head broccoli (finely chopped)(this could be removed or replaced with finely chopped cauliflower)
3/4 cup grated cheddar cheese
1/2 cup fresh or frozen corn
6 eggs
100g fresh leg ham, finely chopped
1.5 tbsp of homemade or store-bought pesto (the recipe for my homemade one is HERE)
Olive oil or butter (to grease your muffin tin)
Method
Allow pastry to defrost while preparing ingredients.
Preheat oven to 180 degrees.
Grease a muffin tin.
In a bowl whisk 6 eggs with the pesto. Add ham, corn, broccoli and half of the cheese.
Cut pastry into squares and carefully push them into muffin tray.
Fill the pastry with the filling and top with remaining cheddar.
Cook for 30-45 minutes or until top and pastry is golden brown.
