Hidden veggie chicken nuggets

I put up a reel not long ago saying my children have a preference for crackers, chips and wraps (and that's about it). I had so many comment, "what about chicken nuggets?!". Would you be surprised to know my toddler doesn't like chicken?! He's never really been a nugget boy but after all of the comments I thought i'd try my luck at a recipe (with hidden veggies of course!). 

I didn't have high hopes for this recipe and in fact, he stuck his nose up at it when I first presented them on a plate. With a little encouraging, he tried these nuggets and then demolished four in a row. I was a happy mother (he did however leave the sweet potato chips because he only likes brown potatoes FML). My baby also initially chucked the nugget on the ground but then ate them once they were cut into tiny pieces. 

Ingredients

1 head broccoli (steamed until very soft)
1 egg
500g organic or free-range chicken mince
pinch of celtic sea salt
3 tbsp of flour (I used nodo gluten free flour)
herbs of choice (you can leave this out if you don't have any)
For coating:
3/4 cup flour (I used Nodo gluten-free flour)
1 cup panko crumbs
2 eggs for coating

Method
In a food processor blend the chicken mince, egg, salt and flour. If mixture is too wet to form balls, add a tbsp of flour until it's manageable. Use an ice-cream scoop to scoop mixture into flour and gently form into nugget shapes with your fingers. Use a fork or your fingers to then dip in egg and then panko crumbs.

*This bit is a little hands on but they don't need to be perfect! I lay two layers of foil on the bench, whisk an egg in a bowl and put it in the centre and flour and panko crumbs on either side of the bowl (saves washing up!)*

Put nuggets into an air-fryer and spray with olive oil. Cook for 20 minutes, turn over and cook for another 10-15 minutes or until golden on both sides. If you're cooking in the oven, cook at 180 degrees for 25 minutes, turn and cook for a further 10-15 minutes until golden (remember to spray or coat with olive oil).

Serve with air-fryer chips and dippy sauce of course! Our family loves Mingle Seasoning tomato and bbq sauce (now available at Coles!)
