Gluten Free // Refined Sugar Free // Nutiiboost

One of my favourite afternoon snacks! High in healthy fats and low in natural sugar, this treat gives you a boost without a blood sugar crash.


  • 3/4 cup puffed buckwheat
  • 1/2 cup cacao powder
  • 1/2 cup cranberries
  • 2 cups NutiiBoost
  • 1/2 cup coconut oil, melted
  • 4 tablespoons of rice malt syrup
  • Cupcake cases


Combine puffed buckwheat, NutiiBoost and Cranberries in a mixing bowl.

Heat coconut oil and rice malt syrup in saucepan on low heat for 5 minutes (do not bring to a boil).

Whisk cacao into warm coconut oil and rice malt syrup.

Pour over dry ingredients and combine.

Place two tbsp of mixture into each cupcake case and set in fridge for 20 minutes. Store in fridge.
