LAMINGTON MUG-PUDDING

Gluten Free // Single Serve // Mug Cake

If you’re a lamington lover – you can’t go past this dessert. It is super simple and can be eaten as a single serve dessert (if you’re PMSing) or shared with a partner.

INGREDIENTS:

For the cake:
  • 1/3 cup of Coconut Flour 
  • 1 egg
  • 1/2 tsp baking powder
  • 1.5 tbsp Rice Malt Syrup
  • 2 tsp Almond Milk
  • 1/2 tsp Vanilla Essence
  • 1 tsp Apple Cider Vinegar 
  • 20g butter 
For the topping:
  • 1 tbsp Rice Malt Syrup 
  • 1 tbsp Cacao
  • 20g butter 
  • Sprinkle of desiccated/shredded coconut

METHOD:

Melt 20g butter & Rice Malt Syrup in a large mug in the microwave for 20-30 seconds (or until melted).
Add vanilla essence, almond milk,  apple cider vinegar & egg, whisk with a fork until combined.
In a separate bowl combine coconut flour & baking powder.
Add the dry mixture to the mug of wet mixture, combine until smooth.
Place in the microwave for 2 minutes.
In a separate mug melt 20g butter, 1 tbsp rice malt syrup in the microwave.
Whisk in 1 tbsp cacao until chocolate sauce forms
Pour chocolate sauce over mug cake, sprinkle with coconut & serve!
